Why do you need formal culinary training?

Yes, you could start working in a restaurant without a culinary degree--a lot of people do. But climbing the ranks you're up against those who have degrees...until you get one. Completing the culinary arts is now required in some restaurants. 

Once you graduate, what position can you expect?

So many chefs are led to believe that just because they graduate from a certain school or program they are guaranteed a position that is two or three steps above an entry level position. This is not always the case.  After you've graduated from culinary it's more likely that you're hired to start washing dishes for minimum wage.
